Creating Audit View for Multiple Records with Specific Change Criteria

Greetings:

We are trying to track a specific field change in opportunities - change to a certain value.   We would want to generate how frequently that change took place so we could count it monthly.  

What would be the best way to do this?  I checked out the auditing functions but don't seem to see where (or if) it is possible to create a view that would track a specific field change although that seemed to be a place to start.

Any suggestions would be appreciated.
