Possibilities with Server Side Sync

Hi guys,

How can I reach this / what is the best practice to use server side sync for following requirements: (And not with CRM for Outlook)

1. Is it possible to select manually which incoming / outgoing emails (sent from outlook) are to be synchronized?

2. How to set regarding to the email or appointment ?

3. I received a new email from an unknown person. I want to create a lead based on this email. What should I do ?
