Exporting Data

I am trying to export some data (for a company to check through our e-mail data) and so I wanted to ideally export all the contacts into a spreadsheet to obtain their email addresses, however, I can't seem to be able to export more than 250 at a time, I thought the maximum was 10,000? I have gone into options but it seems to cap it at 250. Any thoughts?
