Workflow wont show all fields in Contact (Dynamic Value)

Hi. I am utterly confused by this.

I create a workflow in Dynamics CRM 2013 and 2016 in different solutions and Organizations and have the same problem. I set up a rule that checks a created Entity [Employment] for a bool field. If that field is Yes, then send an email. When I try to chose contact.emailaddress1 as recipient in the mail recipient field Dynamic Values act up. When I chose to search in [Contact] I get very few fields or none at all to chose from.

 This is my best case. When I try the same things one hour later I get no values at all from Contact (Person). It makes no difference which browser I use.

Any tips would be appreciated.
