What is Microsoft doing with Dynamics 365 versions ? Help !

I have two tenants based in Europe. One is a trial I opened to develop an angular portal for Marketing. One is a brand new production environment opened by our infrastructure department, about 10 days ago. These environements have the SAME version and build number. Solutions versions are the SAME. Environments ARE NOT the same.

This could be nothing if it was only visual changes, but i.e. for Event banner image, for one you have to add a Web File and for the other you use the new integrated File Manager. What are you doing MS ? How we, integrators, can develop solutions ? How can I tell to my customer that he has to create a web file, find thanks to god what's the parent page and make it works while the trial is way better ?

Versions need to be aligned, this is urgent.
