How to use Workflows to take an email address as an input and determine which Contact to update

Hi, 

We are using the DocuSign integration with D365. Our DocuSign envelope has multiple recipients. I need the Workflow to look at the email addresses of the recipients and determine which Contacts to update. I have no experience with creating custom activities. Can someone point me in the right direction please?
