Opportunity advancement in pipeline

Is it possible to advance an opportunity in the pipeline without using the Dymanics Quote?  Our organization typically prepares very unique SOW's with pricing included and really cannot use the Quote option in Dynamics.  However, we will still like to advance the phase of the opportunity within the pipeline but cannot seem to bypass the Quote phase.
